Hello! I've incorporated a variety of cooking fats into my pantry and meals and have searched A Paleo Approach, but am not sure whether oil used once is OK to reuse for another meal.. Does reheating it chemically change the composition and make a healthful & stable oil unhealthful? I have heard this before and have been unable to confirm its truth.. So should I toss oil used for deep frying (or just pan frying) or give it another life? Thanks for your input.

balancedbites.com/faqs-what-are-safe-cooking-fats-oils/ This is a good post on Paleo cooking fats and the first few paragraphs should answer your concerns. Basically, reuse your deep fat fryer oil as you normally would, that is, until it gets too contaminated with particulates and then discard.

What a great find, Collenn! Thanks so much for sharing this! I just loved the section of Sarah's book where she explains the composition of fats. After years of being told fat is BAD, the fat wool has been lifted ! =) In fact, I've lost even MORE weight since increasing my fat consumption via a variety of cooking oils and animal proteins (and scraping fruit). Amazing.
