Hello AIP community!
My learning journey in food/nutrition and health have taken many twists and progressions, finally leading me to embrace Sarah Ballantyne's Paleo Approach to reduce inflammation in my body. I am constantly referring back to her original and cookbook whenever anything comes up and LOVE how accessible (and contagiously fascinating) the science explanations are! I am 26 and got hit hard by Lyme disease in late June of this year, causing me to develop RA and exacerbated my IBS, among other things. Growing up in an endemic area, I had gotten bit by "dear" ticks and contracted various strains of the disease throughout my childhood--but with the test results, my doctor remarked she had never seen anyone with more strains of Lyme, haha! I've got almost ALL of them. I realized I just knew the tip of the iceberg about this disease.
I've been strict with the AIP since October, once a holistic practitioner recommended a diet change and the results have been WONDERFUL, though I am still troubleshooting and slowly working through some issues. I'm following the low FODMAP and for now limiting myself to low glycemic load foods in hopes to regulate my blood sugar levels--I always had QUITE the sweet tooth (but believe it or not don't even have many cravings lately)! I love mixing up Sarah's recipes and making variations of my own (especially stir frying), but am also curious what you all have cooking. I need to keep it interesting (for the sake of variety, but also) to stick with this long-term.
Other than my healing journey, I love learning in general - particularly about Spanish language and Latin America, to do as many things myself as possible (DIY projects), reading (novels, articles, etc.), and sustainability. Also, I have been getting more into gardening lately. As a very disciplined person I need to work on finding FUN activities that I can sustain with low energy (at least for now) and eyes sensitive to light. Audio books and podcasts have been a WONDERFUL save, but I'm in need of some variety.
