Everyone keeps using beautiful bacon in their aip recepies yet I can't find any that are aip compliant. Anyone have suggestions? Most importantly, I have found "platter" bacon at our local butchers with no ingrediants list. Even the butcher wasn't sure if nightshades were used. I would love it if anyone out there can answer my questions. Tia.

I buy Uncurred, Nitrate Free bacon and my stomach seems to like it! I haven't been able to eat bacon for the past 20 years! Now I know why

I make my own, and I sometimes use maple syrup, evaporated cane juice, or molasses but usually just sea salt. It is my understanding that any sugar used isn't so much an issue in the end, as that sugar is used up during the cure. I'm sure if you checked the nutritional info on the back of most bacon packages the sugar would read 0g. That said, when I mess up my timing with making my own I buy nitrite-free. US Wellness Meats has sugar-free pork bacon also.

so, as with Applewood bacon there is sugar used for curing on the label. So that is ok? Looking for jerky some are cured with sugar too...are they ok? Whole Foods has an in house smoked salmon that is cured with brown sugar, is that ok? and is it ok to eat a sweet potato chip that only has salt and organic sunflower and safflower oils?

I think one of the issues is that the "sugar" is often glucose or dextrose from wheat or corn. I think brown sugar would not be either of those as it is normally unrefined cane sugar.....at least in Australia it is, but we are a major grower of sugar cane so it is probably cheaper here than corn based sugars. I guess the answer is unless the package states what the sugar is refined from you can't be sure it is free of all grain. I think the seed oils should be avoided, at least if you are in elimination stage, I know sunflower oil gives me a headache, there used to be a brand in Australia that used unrefined palm kernel oil, but they have swapped to sunflower oil now
