I was diagnosed with Hashimoto's over a decade ago, and then I got the Celiac diagnosis a year ago. I started to feel better after going gluten free, but six months ago, I got really sick. I was nauseous for 2 months, and then I started to become sensitive to all kinds of foods, including fruits and vegetables (weird things like beets, celery, pears, and spinach). I got to the point where I was only eating 4 things (chicken, beef, carrots, apples). I started to feel better, but I couldn't add in new foods. And when I did add a new food and have a reaction, it was taking longer and longer to recover each time. An endoscopy revealed nothing but the fact that everything was inflamed. The doctor told me to take Pepcid, and that has helped to reduce the intensity of the pain.
So now I am using AIP as a guide for what to add to my diet, focusing on foods that are high in nutrition and the least likely to cause a reaction. So far, I have successfully added avocado, squash and kiwi. I can't handle coconut or pork.
I am also working to address a severe Vit D deficiency and have found that I have a reaction to all Vit D3. So I am taking Vit D2. I know it is not as good as Vit D3, but it is helping.
