Hi all,
I was looking for different recipes for cooking pork and realized brining is a very common method to cook better meat, beef, pork or chicken alike. However, I also know that water soluble vitamins -including some of the B-complex vitamins which we depend on meat sources now that we leave out the enhanced whole grains- dissolve in water.
When I searched for the effects on brining on water soluble vitamins the only things that I found are:
* boiling the meat might cause 80% loss of its vitamins (http://www.ncbi.nlm.nih.gov/books/NBK218177/). Which is okay because we drink that water too.
and
* water soluble vitamins transfer to brine (Food Processing Technology: Principles and Practice by P J Fellows, page 424). In this book it is suggested that we drink brine too, but as far as I know it shouldn't be the case even if only due to its high salt content.
So far, everything I read is leading that brining should be a no-no for those in Paleo Approach. Since brining is a widely used method, I'd expect there were more studies or info out there, but I couldn't find anything else. I suspect I missed something.
Anyone else has any info on the subject? Or any comments?
