Good evening I've been scouring my local supermarkets for coconut products in preparation of starting AIP, however they all contain either guar gum, xanthin gum, carageenan or a mix of the above... would they still be considered AIP friendly? Thanks ever so much

I couldn't find any either. I ended up buying bulk shredded coconut and I use that to make coconut butter (blend till smooth with a tad of coconut oil), coconut milk (blend with hot water and strain, if you want just the thick creamy part put it in the fridge). And of course you can also toast it or use it as is. That said you could decide to use store brought being aware those additives might affect you. Sarah has a great article on these additives on the Paleo Mom blog site explaining what they really are and how they might affect you.

Hi Erin, thanks for your message. I looked for those brands on Amazon, and apart from being blindingly expensive (£75 for 6 cans? in he case of Natural Value) the seller doesn't deliver to France. So it looks like I'd have to stick with desiccated

I would second making your own. So much cheaper and so easy! I can't believe how expensive Natural Value is off Amazon!

I just started making my own coconut milk. I use sea salt to taste, 2 cups of boiling hot water, and 1 cup organic coconut flakes. Blend on high for several minutes. Let cool for about 15 minutes to be able to handle. Strain through cheese cloth in glass jar.

My local market (and Amazon) also carry Aroy Dy coconut milk in cardboard (like juice boxes) boxes in single servings. The taste is amazing and there are no additives. I used to keep an 8-pack in the cupboard for use in recipes. Unfortunately, I found that I can't really tolerate coconut these days.
Aroy Dy is cheaper at the market than on Amazon.
