Hi there, I posted this in the Facebook group but it got lost within minutes. It's a fast moving group! I'm hoping someone can help here. We really enjoy cooking and baking with tapioca starch. My daughter loves the texture and taste and it helps her to not feel deprived. The only problem is that it induces anger and irritability every single time. What's the deal?! Anyone know?

Or...is it possible that it's the sugar in the treats that are causing the reaction? Even natural sugars can mess with blood sugar levels-how much you can handle depends on how sick you are and how regulated your blood sugar is. Try to experiment a bit and make some changes to see which one it is. In the meantime, look for other ways to help her feel healthy and strong rather than deprived. Definitely try to think of non-food treats. And know that using these fancy (and pricey) flours is not a requirement of Paleo/AIP. If I want something sweet, I eat some fruit. Now, my tastes have changed so that sometimes even fruit is too sweet. Hopefully, she'll hit that point quickly.

There are some really good recipes using coconut flour. I had a couple that I made constantly that were muffin recipes. I can't eat them now because of no eggs on AIP, but if I ever get eggs back, they are comin' home to Mama!! LOL!

We use coconut flour, plantains and sweet potato regularly for pancakes, cakes, muffins, banana breads etc but nothing compares to the texture of tapioca when making pizza crust, rolls, breading etc. I just find it curious that the only reaction is irritability/anger. She's not much of a fruit gal (and doesn't tolerate much anyway) but that's not gonna help me when I'm trying to batter some fish . I do appreciate the input though!!

Also, as an FYI, she's been on paleo for two years now so is over that adjustment period.

Ha I was thinking sweets! But clearly, you're thinking flour replacement. I don't have a lot of experience with those...I just don't miss floury/bready foods I have heard of emotional reactions to gluten...therefore I don't think it's far-fetched to think this could be a cross-reaction. Maybe just try to limit how much you use or how often you use it?

Yes, you are probably right with it being a cross reaction to gluten and I am probably in denial. *I* react much stronger than my daughter so I'll stop eating it myself first and observe her when I make her things. She doesn't tolerate much on the cross reaction list so it's not totally off the mark that she'd be sensitive to it.
