So. Does anyone have any lovely recipes for heart to share? I keep meaning to get hold of some and make something but can't get around to it. I think I need some inspiration!

Heart just tastes like slightly chewier roast, so you can use it pretty much anywhere you would use a standard muscle cut. Last night I had heart fajitas for dinner; I also like it sautéed with bacon and green onion, in chili, or just roasted with salt and pepper.

I've found heart to be best in the slow cooker. If you can do tomatoes, it's great slow cooked in tomato sauce, but broth also works good.

I just made the marinade from Sarah's The Paleo Approach Cookbook, Sweet-and-Sour Beef Heart Jerky. The marinade turned out more like a paste and not a marinade. It was difficult to massage into the sliced heart. The heart meat is currently marinating. Has anyone tried making this marinade? If yes, did you a similar result with the marinade?
