I'm going to paste the few texts that I've already written to have an overview of my journey so far from the beginning.

My name is Alexandra, I'm 34 years old, I'm French, but I've been living abroad for 14 years, we are currently living in Dubai, 5 years ago I was diagnosed with Myasthenia gravis.

It all started with double vision one night, and then the next, and the next...
My luck was to come across a very competent doctor in the ophthalmic hospital of Lyon, who immediately suspected MG, some people spend years suffering without knowing why.
Fast forward 5 years, my MG is stable, my eyes, arms and legs are the parts of me that are malfunctioning more or less randomly.
Some days I only have my eyes that see double, other days I can not get into my bath without help or even brush my teeth.
Some weeks I do a lot of sports, others I 'm struggling to get up of bed or climb my stairs, it varies, mostly depending on my hormones.
But I would say I'm usually good with some bad days per month.
I take mestinon 60mg, the dose depends on the day, on the good days I take 4, on the bad days 8 and above.
I was advised thymectomy (removal of the thymus) and the administration of corticosteroids to suppress my immune system, I have hitherto refused, especially because I currently live in Dubai and the care is private here, the more interventions prescribed for the patient, the more money the doctor gets. It doesn't really inspire trust in the medical system here.
A month and a half ago, I decided to go on a diet, and yes like all girls I think I have a few kg to lose, I followed the advice of a friend who had done a diet proposed by gym here, it went something like: cut everything, milk, sugar, gluten, caffeine, you can have meat, green vegetables and sometimes you are allowed fruits such as berries ( blueberries, raspberries ... ) other days nuts, and other days still some carbs or legumes like carrots, lentils, chickpeas, and of course 3-4 liters of water and / or green tea.Plus each day you get an exercise video, and finally some days you have to fast, some times for 17h and once for 24h.
The diet was a success, but what was even more amazing was the reduction of my symptoms, so much incredible energy !
This diet lasted only two weeks (I counted the days, especially at the beginning), the following week, I started to reintroduce gluten, sugar, and milk in my diet, and there downhill it went, a truly horrible week, my legs were not working, my arms hardly either, and don't get me started on my eyes.
And then the penny dropped, I started researching autoimmune diseases and diet, and the more I found, the more I read The diet I had been doing, was close to the Paleo diet.
When I think I waited 5 years to take my health in hand, and not just defer to a traditional medicine that sees me as a statistic, I want to slap myself, but the past is the past and I am determined to go forward.
I contacted a nutritionist here in Dubai who treats many patients suffering from autoimmune disease and who knows the paleo diet well as she sells organic paleo food via a store. Because honestly even after deciding to remove the sugar, gluten and dairy from my diet I need help as the rest is a bit hazy and I'm afraid to get lost and go in every direction at once (especially because of Pinterest hahaha), so I have an appointment with her onThursday, June 29 (I'm very excited).
I also invested in two books:
The Paleo Approach: Reverse Autoimmune Disease, Heal Your Body, by Sarah Ballantyne
The auto immune cookbook by Mickey Trescott
I hope they'll help me see more clearly the path I have to follow and also to have recipes ideas because otherwise it can quickly become a boring diet in addition to being binding one.
