So I've been making tiny, sushi-sized "wrap sandwiches" using whatever the heck I want for the filling, and toasted nori sheets for the outer wrap. The last one I made had thin-sliced turkey as a base, Divina kalamata olive spread, chopped bacon, avocado, and clover sprouts (are those ok? A friend has my book, so I couldn't look it up. I figured it was because they're not seeds anymore - they're tiny plants.) Rolled it all up just like I would sushi, cut the rolls like I would for sushi, and chowed down. Two rolls seems to be the equivalent of a decent sandwich. Give it a try, and share your own combos! I might try more sushi-ish filling today - tuna, pickled daikon, cucumber, etc

I have actually been doing this as well, but I don't really cut it up like sushi. I just bite into it like a wrap! lol It's kind of messy, but I love it. Makes me feel like I'm actually eating something like a sandwich.
Speaking of, are you guys able to tolerate coconut flesh? I can if it's cooked. I found these wraps on amazon called "paleo wraps" that are just pressed coconut. They are delicious! Texture is kinda weird, but hey I eat weird things! They're a bit pricey, so I just have them occasionally as a treat. The other night I had one of the wraps, then threw a sushi wrap on top of that, then filled it up with tuna, lettuce, avocado, and pickles. It was sooooo good!

sounds really good! I have also made "sushi" using cauliflower rice, fish, veggies etc rolled in nori. And the best yet was this... salixisme.wordpress.com/2014/05/03/nori-veggie-snacks/ not strict AIP because it does contain seeds, but I bet you could add some extra veggies to make up for the seeds

Do you (other than Stell, since she said she did) use toasted nori or plain? Is it better to toast your own in the oven or buy it pre-toasted?

I think it's better to buy it plain. A lot of the toasted nori is coated in oil, and many times it's a seed oil.

Oh I'm glad I'm not the only one using nori sheets for everything lol! I like wrapping our burgers in them, too.

Mmm I really love nori and making sushi, I too have done it with cauli rice but I'm going to try it with just chicken, spinach and avocado. So yummy. I can't believe for ages I didn't like it but suddenly (from eating whole foods!?!?!) my taste buds changed and I think it's YUM!

Is Nori AIP-legal? I have not been able to find a brand that is free of sugar.
