I am looking for an AIP friendly liverwurst. Seems every one I find, including Wellness Meats, has some non compliant spices in it e.g. coriander in the ones at Wellness meats. Also nutmeg, or nightshades. Is there any hope for getting my organ meat this way?

Yup, probably need to make your own. And it won't be so much "liverwurst" because liverwurst spices are pretty much all nightshades. You can add a little pureed liver to meatloaf, meatballs, burgers with any kind of flavors.

I agree with those who say to make your own.
I have a recipe (made in a loaf tin, not as a sausage) - I can post it if you want (prob in the organ meats recipe section).

i have in the past taken the chopped liver recipe from the clothes make the girl and left out the caraway seeds, eggs, and black pepper. Then at the end when I am putting it in the food processor I add a bunch of extra fresh herbs-- parsley, rosemary, cilantro, tarragon... to taste and a bit of extra fat. I didn't miss the eggs or other spices.

Jones Dairy Farm liverwurst is gluten free and nightshade free. That's good enough for me, and shouldn't be a hard reintroduction.
