janeway, guar gum is derived from the guar bean, so it's not Paleo or AIP. Eating it, even in small amounts, can give people unpleasant digestive symptoms. Chris Kresser says: "I think it makes sense to avoid guar gum if you have gut issues, like small intestinal bacterial overgrowth (SIBO) or IBS, unless you’ve removed it and added it back in without noticing any harmful effects."

Just thought I would say that I bought a paint strainer and had much better luck with getting all the graininess out of my coconut milk.

guar gum irritates the gut lining, so if you are trying to heal your leaky gut, it can make things worse (it has also been linked to colon cancer - another reason to avoid it!) Not paleo at all as far as I am concerned.
I would not worry about citric acid in coconut milk as that is a natural product, but I avoid guar gum, carageenan and any preservatives like metabisulfites.
