I had read somewhere to stay away from coconut milk if it has guar gum in it. So I'm at the store comparing labels one had guar gum and the other brand has preservative and citric acid listed...which one? I didn't but either of them...

Native Forest, Aroy-D and Natural Value are 3 brands of canned coconut milk that do not have BPA in the can lining or thickeners (like guar gum) in the milk, according to what I read recently. I have both Natural Value and Native Forest in my pantry just now.

Good call on not buying either! Try a different store or buy a good brand (with no additives) from Amazon.

I just double-checked the Native Forest coconut milk in my pantry. "Organic guar gum" is on the ingredients list. Arrggghhh! That's a fairly new thing, and it caught me by surprise! Glad you asked this question.

Also be careful with Aroy-D, they sell many different canned coconut milks, many with additives - always check labels.
...and making your own is really quite easy...

Haven't seen any of those brands around my area but I haven't checked health food stores yet! Natural Value is also available on Amazon. My co-op sells it for a bit cheaper, so I just get it there though. They have both natural and organic options. Both are BPA free and without guar gum.

Everyone told me, but I never believed it was easy to make coconut milk yourself. But once I discovered that you can use unsweetened shredded coconut, it changed everything! You know what is in it, and it is a whole lot cheaper. Plus if you keep shredded coconut on hand, no need to worry about running to the store when you run out... you can make another batch in seconds!! I store my coconut milk in a little mason jar and give it a good shake when I am ready to use it!! wellnessmama.com/2447/homemade-coconut-milk/

I have been making my own but I'm not completely happy with it. When it separates the fatty part has a graininess to it. I am using a really old blender...but I have a new food processor. Do you think I should try the processor? Also, I use a nylon strainer.....maybe I should use something that will strain better? I love the taste but it does not have that whipped cream aspect. I am thinking of trying to find some of the paint strainers to help separate it better. Sorry I seem to have so many questions on so many subjects.....I have just completed my first eight weeks of AIP.

I checked and the Natural Value at Amazon is $3.15. That is additive and BPA free.....no shipping with Prime. I don't mind making my own if I can get it smoother....but it might be nice to have some already made.

After I started making my own coconut milk, I'll never buy canned again. I am in LOVE with the flavor of home-made coconut milk. Super easy and tasty!

What exactly is bad about guar gum? Is it just generally inflammatory? Is it paleo but not AIP? Or not paleo at all?
