How are others with MS doing on AIP - Paleo/Primal

How is everyone else doing on their journey with AIP - Primal/Paleo?
I started this journey 3-4 years ago with learning what foods I was sensitive to by doing an elimination diet. Turns out that I'm not only lactose intolerant, but I'm also sensitive to gluten, corn, soy, and nightshade vegetables. Once I cut all of these things out of my diet, I started to do better.
It all started with me cracking some ribs while coughing from a cold, and that's when I found out my vitamin D was very low. My doctor told me to take 2000 iu of D daily. Trouble was, I was already taking 5000iu a day! Once I cut the foods I was sensitive to out of my diet, my vitamin D levels went back up.
After that, it was trial and error to find what worked with my body. I was vegetarian for a while, then vegan. With both of these, I found that I had no energy and felt out of it most of the time. It was then that chef at home (my partner is an actual chef), told me that I was going to have to quit being so picky and start eating meat again. I did and my energy levels went up, as well as everything that was lacking on my routine blood work. I also had trouble with being anaemic (even when I was eating meat).
I still have trouble with sleeping, but I have more energy during the day to deal with life and to be with my 7 year old, and I find that what sleep I am getting is deeper and therefore more restful.
I have a New Zealand whey isolate protein shake every day (helps with glutathione), with coconut oil, blueberries, chia seeds, gelatin hydrolysate (the green can), and l-glutamine.
I drink my bone broth every day, though most of the time on the weekends, I just double up on my gelatin from the green can.
I drink my water kefir, milk kefir, now kombucha every single day. My 7 year old is finally starting to drink the water kefir (we 2nd ferment with grape juice all the time). I try to eat fermented foods when we have them.
I take raw liver 'pills' every day, as well as chlorella, spirulina, turmeric, and beet powder. I'm going to add in some heart 'pills' every day soon too. Though I think that I'm going to dehydrate and make a powder from this and put it into some gelatin capsules.
As for exercise, I have been lifting weights for almost two years - 3x a week, and before that, I did kickboxing almost 5 days a week. Lately, I've added in strength training to my mix, and I want to be strong!
