My husband has finally seen the light and went paleo (plus dairy) last week (was eating SAD). YAY! Breakfasts and dinners are going well- I've been AIP for almost a year and grain free/SCD for years so I've got a bunch of go to meals there. We're having trouble with packing work lunches tho. He's mostly been taking leftovers from dinner plus some nuts and fruit like an apple, for a snack. This is a major shift for him and he's still adjusting from the SAD and he's not too adventurous. I'd like some alternative lunches for if he either didn't care for the dinner or if we have no leftovers. He use to get stouffers mac n cheese or hot dogs and is at a loss for alternatives. The few times I had to pack myself a lunch I took canned sardines or picked up smoked salmon or prosciutto & figs or pears or rotisserie chicken but those are all not things he likes.He also doesn't want anything resembling a kids lunch box. He might occasionally do a salad and I'm thinking of making a work kit with a bunch of shelf stable snacks to keep at work (tuna steaks (the one fish we will eat), canned pineapple, homemade larabars & jerky, nuts, maybe some dark chocolate for emergencies). He does have a community fridge and microwave at work. ANY ideas are greatly appreciated!
