Does anyone follow AIP for Type 1 diabetes, specifically with their child?

Hi, my son was diagnosed almost a year ago. A few weeks after diagnosis we went AIP. We managed it for about 4 months, and the whole time he was "honeymooning" requiring no insulin, and got an A1C of 5.5. Thinking we kind of had it down, I reintroduced cheese, soon after things went haywire with his blood sugar and we were never able to pin down whether it was dairy or just the end of the honeymoon. Next appointment they really put pressure on us to increase the carbs in his diet to increase the rate of his weight gain, they mentioned involving CPS (just in case, that's Child Protective Services, the agency that can take our kids away from us if they don't like what we're doing) if we don't comply with the clinic's protocol, so now we've got gluten-free rice flour bread and more fruit in his diet, but we are limiting all dairy and very, very low (if any) sugar. Have you tried it? I want to go back to it, plan to actually. We've got 5 kids so it's really tough doing AIP for everyone, but even tougher to limit just our one little guy, when the others are having foods he so badly wants. If you find any more info for AIP for T1D, would ya let me know? I will do likewise.
