Hello I am Beth and I would love to connect and talk real food. I am in Bend, Oregon at the moment. We are looking to move to Southern Oregon to buy some land and start a Farm. I look forward to meeting other like minded foody folks!
Here is my Introduction from the welcome post
Hi I am Beth from Oregon. I was diagnosed with MS 10 years ago at the age of 27. I was always very active and healthy this was a tough new reality. I am one of those people who has to investigate everything. When my Doctor would tell me that my MS just happened and there was no cause and no reasoning and nothing I could do to fix it but use Chemotherapy shots. I thought no I will find answers. I discovered that Lyme Disease was the trigger to start me off on their auto immune journey. We treated the Lyme over and over again with antibiotics. I did that for 8 years until my stomach could take no more. I met a very alternative practitioner who studies Iridology, the study of the Iris. She looked in my eyes and said I had the worst digestion she had ever seen. She said we will fix that and you will be fine. I thought she was crazy. I had nothing left to loose. I could not take any more antibiotics and there MS injections were doing nothing. She put me on a Vegetarian diet and we did a big cleanse. I started to feel better but I was starving and I knew something was missing. Sitting on Facebook one day Dr. Terry Wahls Ted Talk popped up. I pressed play and my life changed. I ordered "Practical Paleo" by Diane Sanfilippo. Neither The Paleo Mom or Dr. Wahls book had been released at that time. I read her book on an airplane going to visit family with no plans to change my diet. Reading the book it all made so much sense to me. I made the switch to Paleo that day. Only regret I should have had one more slice of pizza and a doughnut! My family thought I was weird funny thing is they all went Paleo a month later. Result I have been symptom free for 16 months. I love my new life. I am 38 now and we are changing our whole lives. I just quit a company that I own because it was bad for me and started studying to become a Nutritional Therapy Practitioner. We are also selling our house and moving to an area where we can afford our very own Homestead. I am inspired to feed the world real healthy food. I look forward to getting to know all of you!
