I finally tried making coconut milk from shredded coconut and love it! Now I have the squeezed out pulp. what is the best way to use it? Dry it out and process more into flour? Use as finely shredded coconut? How do you use it?

I spread mine out on a sheet pan and pop it in the oven around 250 for a while. Until it feels really dry. Then I put it into the food processor and get it as fine as I can. I haven't tried to bake with it (don't think my processor gets it as fine as a high powered blender would), but I do use it to bread chicken strips or zucchini spears along with salt and pepper and either fry or bake it. And I'll use it anywhere else "breadcrumbs" would be needed.

That's a great idea! I'm trying it tonight on some chicken, I tried coconut flour but it was too dry and powdery but these finely ground flakes seem perfect!
