I'm looking for AIP recipes. This dill pickle recipe has no night shades or seeds. But there is a LITTLE bit of sugar in it. I'm looking for the ok, or not, of this recipe. emilylevenson.com/recipe-refrigerator-pickles/Any help would be great! Beth in NC

Hi Beth! That recipe looks like a great snack option. I think I'll try it...thanks for posting. I don't believe a T of sugar is anything to be concerned about, but I would definitely not use standard refined sugar. Would also use Bragg's instead of white vinegar. Best, Colleen.

Thank you both. I start on sept 1st and I'm still getting my ducks in a row. I wanted to have a quick and easy snack for when I don't have other food prepared. I want to do this right!

Hi again :-) I should have clarified by adding I would use honey or just leave the sweetener out altogether. Ugh, sorry. With the AIP, snacks are tough. The idea is to eat enough at meals that you don't feel the need to snack, but I totally get where you are coming from - I've been there with the need for snacks. Cooking completely from scratch for just about everything can be overwhelming. Batch cooking is very helpful. However there are some good snack options to get you through. Jerky is great (especially if you use beef heart for all or part of it). Also...liver pate or guacamole with veggie sticks, tuna on celery sticks, smoked oysters (packed in olive oil). My daughter especially likes pumpkin leather, in moderation. So, those are some ideas to get you going - good luck - keep us posted on how it goes!

I had no idea pickles could be so easy! I'm allergic to garlic and can't find a single jar of pickles at any store without garlic--well unless it's full of yellow #5 and HFCS. Anyway thanks for the recipe. If I can find the right cucumbers I'm making these this weekend!
