I've been paleo (but not dairy free) for a year and a half. My 9 year old daughter is now gluten free but dad and 5 yo son are die hard carbovores and the thought of not eating pasta scares them to death (though we only do GF pasta now). Both guys hate veggies and my daughter is not a meat lover. Dinnertime is a nightmare. I'm a working mom w/ not a lot of time to prepare. I've done slow cooker dinners, burgers & dogs, grilled chicken, etc. but everyone (including me) is bored to death. What are your favorite meals?

I would offer a lot of variety, not a single meal, in order to please everyone. I see the time problem but maybe batch cooking would help here. Try making a big pot of a meat dish/two whole chickens at a time that lasts for several meals, and cook smaller portions of several fresh sides along with it.

Tacos might be a good choice. You can make a salad for yourself, and the rest of the family can enjoy tacos. Though my own kids are tired of them ;)Meatballs are another easy option that my family enjoys any day! Traditional BLTS's, but you can wrap the bacon in lettuce with some avocado. I like a bbq pork or beef too. Some can eat it on sandwiches, you can eat it on a baked sweet potato, in a salad, or alone. Hope that helps!

Let the kids help you shop, and pick (within reason if course) out what to cook. I find I get more buy in if the kids feel like they helped make the decision of what to eat. Even more if they help cook it. If you are not overtly celiac, maybe transition slower?
