I don't like cooking. I also don't like meal planning. Most of the time, I don't like to think about food at all, and when I'm on the AIP, having to do so ALL THE TIME pisses me off a lot, and it becomes really easy to fall off the wagon due to not having any suitable grab-and-go meals. Snacks are easy enough to rustle up, but complete meals are the difficult bit. So, in response to that need, I decided to develop a series of recipes for complete meals in a "cake" or patty form. Kind of like how you make crab cakes, or veggie burger. Each recipe features a meat, a green vegetable, and a root vegetable or two. They freeze well, thaw and reheat well, and the portions are easy to control. And the best part? Not having to cook multiple dishes or pull multiple things out of the freezer to get a complete meal. It's all there in the cake. They aren't pretty. They aren't OMG super delicious. But they do taste good, they do satisfy, and they are complete. You might not even need a plate or fork to eat them. I have been posting the recipes on my blog as I create them, and I will continue to do so and update this post accordingly. The recipes so far are: Cinnamon Garlic Lamb Cakes (Lamb, sweet potato, and zucchini) Smoked Fish 'n Kale Cakes (Smoked fish, white sweet potato, and kale) "Thank You" Turkey Cakes (Turkey, Jerusalem artichoke, and broccoli) In addition, I would love it if others would contribute to this project! So long as the ingredients form a complete meal, can all be scooped out with a 4 oz. scoop, flattened, and baked 'till handle-able, it'll work and I'd like to hear about it! A note about freezing - I've been vacuum packing mine in packs of three. The best way is to put the tray of cakes into the freezer until they've frozen solid, then vacuum pack them, so the sealer doesn't try to suck them dry and smash the crap out of them.

Love it!! Going to try some but ... Include liver next time but not all (it is stimulating for me so no good for dinner) ... And I think these would be great! I'm going to do the lamb one tomorrow :-)

That is what I love about soups and stews. You can throw everything in and then freeze in small portions. One meal in a bag!

Your recipes inspired me to make my own version today! I used ground beef, sweet potato, zucchini squash, onion, garlic, red beet, parsley, parsley root, salt and kohlrabi greens. Basically what I had lying around. I'll report back on how they taste cold tomorrow, hot they are delicious! Thanks!

I am so thankful for your meal cake idea! I usually have enough time to eat breakfast at home in the morning, but I knew this morning I was going to be eating on the run as I had to leave at 6:00! I decided to make some meal cakes last night with what I had laying around. I had some leftover salmon and barramundi (?), sweet potatoes, and wakame seaweed. The fish had been baked just previously last night for dinner. I cut up the sweet potatoes (two different kinds, buth had white flesh) and gave em a generous rub down of coconut oil and roasted them till they were really soft, then mashed them. I placed the wakame in water and let it soak. I figured I had enough of each for 4 servings. I just combined it all in a bowl, squished it all together really well then formed 4 large patties. I cooked those in the oven for 30 minutes then put them in the fridge. This morning I thought it might be better a little crispy on the outside, so I threw it in a pan while I was getting ready with some bacon grease then threw it in the container and left. I ate it while driving and it was perfect! I had forgot to season them when I threw them together, but it didn't need it. I was and am still totally thrilled. So today I grabbed a bag of organic frozen broccoli, frozen squash, and I'm going to combine canned sardines and tiny shrimp to make "utterly lazy cakes" lol. I'll let you know how they turn out. Yep. They'd take up very little space in a cooler and would heat up easily in foil over the fire.
I've also made meat/root/greens hobo pie-type foil packets and cooked them in the coals, which also works nicely. They'd take longer to get a meal on the table, though.

I've started doing this too! I recently made the zucchini fritters I found on Pinterest, without the egg, and adding some plantain. That left me with a crab cake like patty when fried. So, the next time I added crab and dill, fried them, then froze them on a cookie sheet.
I eat these for breakfast now, and it's become my favorite fast food. I simply pop them in a small pan and reheat them. They get a bit crispier on the second heating, which I really like.
I'll be trying more of these types of recipes too. I also make a number of different meatballs, which makes the tough days much easier!
