My youngest daughter is high functioning autistic. She has a very hard time with transition and is an extremely picky eater. She is completely gluten and dairy free - as she has an allergy. She will not yet transition to almond butter, and eats a lot if organic peanut butter (she will only eat one brand). Peanut butter and apple farms pepperoni is the only protein I can pack in her lunch that she will eat.
Because peanut butter sandwiches are still such a huge part of her diet I would like to find the best bread possible to transition her two. The Paleo Bread is gross and no one in my family will eat it. We do buy gluten free bread at Costco but it is full of rice flour. I also found break made out of buckwheat at a semi local gluten free bakery.
I also tried always making it, however with three special needs kids, working full time, and no back up I exhausted myself and have had to step back. Does anyone have any better ideas on bread? Or for lunch. She will not eat anything cold that she feels should be heated up. She will also not eat any other lunch meat - but I will try introducing in something else soon. Thanks!

Will she eat the peanut butter on celery and/or apple slices?

She will not eat celery, and she will eat apples only at home. She does not like when they brown in her lunch box. I even tried lemon juice to keep them from not browning but it did not work.

I make a plantain bread that is basically raw green plantains, eggs and baking powder - do you think she would eat that? salixisme.wordpress.com/2014/04/03/plantain-bread-gluten-and-grain-free/It only takes a couple of seconds to blend and the cooking time (which really is non-work time when you can come on here and post!)... the hardest part is peeling the plantains!

I have tried plantain recipes but don't like the starchy feel of them. Luckily we don't have nut allergies so we eat lots of almond meal goods.

We have a great gluten/dairy free bakery here in Atlanta. You should see if there are any near you that offer bread.
The Paleo Mom also had muffin and biscuit recipes. I bet you could slice the muffins and make mini sandwiches out of them. Just a thought.

also, could you take the time to transition her to a non-bread lunch over the summer - it may take some time, but adding some diversity to her diet may be worth it. Maybe serve something that is normally served hot, but that is also good cold, and gradually serve it at a cooler and cooler temperature each day so that she gets used to it. I have no idea if this would work as I do not have a child with these issues but am trying to think around the issues and find solutions.
