I have some mustard greens from my latest CSA basket. I have never prepared them. I have found a few recipes for sauteing them and braising... should I do that? Or just use them in a smoothie in my Vitamix? Thoughts?

They are very peppery- I don't know that they would taste very good in a smoothie- worth a try I guess! I like them braised with bacon- even my 10 y/o will eat them that way...

Mustard is indeed quite spicy - I kinda like spicy smoothies, but it's definitely not for everyone. They're a great way to add flavor to salad, though. Mustard greens are divine cut with lettuce and/or other, mild greens and dressed simply.

Southern style: cooked with "fatback" or salt pork or bacon. Of course, the accompaniments to a true Southern Style Mustard Green meal are not AIP complaint ...but..... oh, and a splash of ACV after you plate them makes the dish...

I have never tried mustard greens, but I like to sautee all my greens - sometimes with a little bacon.

I actually love them as "kale" chips! They take less time to bake though since they're thinner. Good luck!
