Can't believe how well these worked! Adapted from the Spunky Coconut donut recipe. I didn't bother to make a cross, but you could do one with coconut butter (concentrate).
Egg-free, dairy-free, grain-free hot cross buns - AIP friendly
2 ripe mashed bananas or [1 banana & 1/3 cup applesauce] or [2/3 cup mashed butternut or sweet potato] 3/4 cup coconut milk 1/4 cup rapadura or maple sugar or date paste 1/4 cup coconut oil 1/2 tsp sea salt 1/4 tsp baking soda 1 tsp acv 2 tsp cinnamon 2 tbsp tapioca & 1 tbsp gelatin mixed in 1/4 cup water rind of 1 orange, finely grated rind of 1 lemon, finely grated
1/2 cup coconut flour, sifted 1/4 cup currants or sultanas
heat oven to 180c (375f).
process first lot of ingredients. add coconut flour and process until incorporated. stir through sultanas.
use a large ice cream scoop with a lever to make buns, or divide the dough into balls if you don’t have a large ice cream scoop with a lever.
bake about 35 minutes.

When you say tapioca... Do you mean starch or beads?

katrina, i think you could definitely do it with very ripe plantains. not sure about green ones. i made a sweet potato version that was excellent.
