I'm going out of town today, so I wanted to start off with a big, nutrient-dense breakfast, since I'll likely be eating a lot of snacks and stuff (carrot sticks, dried meat, I don't even know what else yet) to get me through the day. I'm pretty proud of what I came up with: a big plate of brussel sprouts, butternut squash (from frozen) with rosemary, and sardine patties! I made the sardine patties like so: 1T arrowroot powder 1T coconut flour 1 can sardines (I used bristling sardines in water and drained the water) 1/4 C water (in hindsight, I wish I had just used the sardine water) garlic powder, onion powder, salt, all to taste I just mixed the arrowroot powder, coconut flour, and water together, added the spices and the can of sardines and mashed until completely incorporated, dropped spoonfuls in a pan (with coconut oil to fry in) and flattened them into patties. I ended up with 4 patties. I let them fry 5-6 minutes on each side, and then a few minutes longer to get a bit more crispy. They held together well enough to stay in patty form and tasted great! Next time I do this, I'm going to add a bit more coconut flour, maybe.. I'm really happy with this, though- it was quick, easy, super filling, and I feel like I got a good start to the day.

Update: I made the same recipe, but used nutritional yeast instead of coconut flour (verdict is still out whether nutritional yeast is AIP-friendly?) and I liked it this way a lot better. Topped with avocado slices, this is my new favorite breakfast!
