Two of my sons have tree nut allergies. I know one is anaphylactic to cashews. The ER is always a joy. We have always just avoided all tree nuts. But now that our primary diet has changed, I'm becoming increasingly frustrated by our lack of knowledge on which nuts they may actually be reactive to. Both boys tested positive to almond in the past, but other nuts were not tested. I call our immunologist the other day to set up testing specifically for all tree nuts and seeds. The earliest I could get them in was the end of June. Has anyone dealt with moderate to severe nut allergies? Have you trialed any yourself? The kids love granola and I'm working on some muffin staples for lunches, but it is near impossible to get over this nut issue!! My coconut flour baked goods are not turning out as well as I'd hoped.

Have you tried baking with plantains? I'm suspecting nuts to be part of my little one's digestive problems. I made Sarah's plantain muffins the other day and they were a hit with both kids

A while ago I had created a "granola" recipe that didn't have nuts or seeds in it, but did have coconut. I don't remember exact quantities and it was my own recipe, so I don't have a link, but I used apple chips, apple butter, honey/maple syrup, coconut, cinnamon in the food processor. I then baked it and added raisins in after it cooled. I'm not sure if that helps or not.
