Having this for lunch right now, and it is amazing!

thanks for posting this! I am going to have to try this in my electric tortilla press!! I ADORE Sarah's Plantain pancake recipe! We make it about once a week or so. So delish! If you haven't tried them yet, you must!

I love the pancakes too, Randi, but I'm back on strict AIP so no eggs for now :-( Curious to know if these wraps would work in the press - I think they may need room to puff up a bit in the oven in order to cook on the inside. I thought mine would take less time because I made a small batch, but they needed the full 30 min in the oven. Let us know how your experiment goes!

What is really good that can be made with 2 ripe Plantains? I hadn't actually hear of them until Sarah mentioned them somewhere. I saw some in a shop for the first time ever, and had to grab some...lol

Because ripe plantains are so much sweeter do you think the crackers can be modified to add a bit of cinnamon and some sweetener to make a cracker with the taste leaning more towards graham crackers? More of a sweet and not savory type cracker?

I haven't tried them yet, but plan to this weekend, since I have a couple of ripe plantains too! I made my first batch of the green plantain wraps Monday night to use with my breakfasts this week. I'm not sure what I may have done "wrong" or if I'm just not a fan but these are edible but not something to brag about. Am I just weird or is there some tricks someone can share to improve my next batch?
And, I'm a total fan of plantains but not so much with this wrap...
