I'm not sure how many of you are doing AIP but I'm having a difficult time with many of the desserts as my biggest trigger foods for IBS are bananas and coconut.
Does anyone have any good dessert recipes that are AIP compliant but don't have either banana or coconut?

Baked apples with cinnamon and ginger. Strawberry rhubarb compote, just berries and rhubarb cooked down - maybe a touch of honey to cut the tartness. Plantain pancakes with fresh berries

Chocolate is non-AIP so steer clear of that. According to Sarah, carob is an okay substitute on occasion.

Honestly, my "desserts" tend to be a strawberry or dried fig after dinner. They're so sweet, I can't eat more than 1 or 2 anyway.

I found a date paste recipe on Pinterest. It is a natural sweetener. I haven't tried it yet, but it might be something you can add as a sweet treat. Just search date paste recipes.

how about a dried fruit compote - just an assortment of dried fruits cooked in some orange juice until they are soft.

I purchase Carob Powder recently because I know it is AIP friendly. I know I had a recipe that I was going to use with it and coconut oil as a freezer candy. Unfortunately, I lost the recipe. Can anyone give me some carob AIP friendly recipes. I need a treat for the weekend. Thanks.

If you melt 1/2 cup of coconut oil over low heat, and whisk in 1/2 cup of carob powder and 1 t pure vanilla then refrigerate it, it will harden and can be broken into 'chips'. I put it in little cute molds and pop them out when hard and store in the fridge in a zip lock bag. There is no sweetner in it, and it has an inherent sweetness from the carob. Reminds me of 70% or more dark chocolate. I have used this same ration and made carob dipped coconut macaroons. (I use Elana Amsterdam's egg free recipe for the macaroons.)
