I use the GT bottles too. I wish I could taste kefir water that someone else has made so I would know how mine compares. I think it has a slight beer taste and I'm not sure if it should. I did try a longer first ferment so it is more sour than sweet now.

The "beer" taste is probably due to the yeasts - I find that if I ferment my water kefir for longer, it is not only more fizzy but it tastes more yeasty as well. Don't forget that WK contains a small amount of alcohol, and the longer you ferment it the more alcoholic it will be. kellythekitchenkop.com/kefir-sodaan-alcoholic-beverage-real-food-wednesday.html

Thanks salix, I love that site. I believe she talked about some things I hadn't read on other sites. Sounds like my 'soda pop' is ok. But I have the same problem that I am the only one in my family who likes it.
